PlumPanettone
This is my very first recipe with the sourdough. I have been given it and I was afraid of not being able to do anything with it the first time – but, to my great joy, the result was much more that I was hoping for! The result is a very spongy bread, very similar to panettone, for taste and consistency. I take this chance to wish you all a happy and peaceful Christmas! 😀
Ingredients:
100 gr of sourdough, refreshed the night before
200 gr of superfine wheat flour
10 teaspoons of sugar cane
grated zest of 1 orange
grated zest of 1 small lemon
juice of 1 / 2 orange
raisin
warm soy milk, as needed
extra virgin olive oil
salt
Method:
Put the flour in a bowl with the grated rind of orange and lemon. Add sourdough (refreshed the night before), sugar and oil. Also, add the orange juice and mix the ingredients well, first with a fork and then with your hands. Slowly pour in the warm soy milk, until the dough is firm and soft. Transfer this dough on a floured work surface, add the raisins and a pinch of salt and start kneading for about 20 minutes, incorporating air and slamming the dough on the table from time to time. Knead until you get a smooth and soft ball. Now, transfer the dough into a small plum cake mold (mine was a little too long, and then grew more in length and height). Wrap it with a damp cloth and place it in oven with the light on. I let it rise all night because, perhaps for the weight of the milk, raisins and all the rest, it took a lot to rise. But this morning I had a nice surprise. It was nice and puffy! Bake at 180°C for about 30-40 minutes. A sweet bread, really spongy and delicious! 😉
