Couscous Pudding with Orange
Ingredients:
(makes 4 puddings)
6 sweet oranges
3 cups of water
6 tablespoons of couscous
1 ripe pear
1 large pinch of cinnamon
1 pinch of cloves
1 handful of raisins
4 vegan biscuits
1 handful of pine nuts, to decorate
Method:
(Over)cook the couscous, over a very low heat, in the water where you’ve added the orange juice; sweeten it by adding pureed ripe pear and raisins. Flavour with cinnamon and cloves and stir often, to avoid it all being caught at the bottom of the pan. When the liquid has been absorbed and you’ve got a thick cream, pour it into 4 pudding molds (I made two only, and when I came to the end of my portion I slumped to the ground! :-(), on the bottom of each of them, put a crushed biscuit, softened with a touch of water. To facilitate the operation of crushing the biscuits, you can place it between two sheets of baking paper and crush them with a rolling pin. Let them rest in the fridge for a couple of hours, and serve the puddings on a plate. Garnish with pine nuts and a sprinkling of cinnamon and cloves.
