Cashews Heart
Why would you choose a saturated fat cheese, which can cause obstructed arteries and high cholesterol levels, when you can easily have a healthy and cruelty free cheese, packed with good fats?
Ingrdients:
3.5 oz (100 gr) of cashews
1/2 (120 ml) cup of water
1 teaspoon of yeast
1 teaspoon of extra virgin olive oil
a pinch of salt
poppy seeds to taste
1 teaspoon of agar-agar
Method:
Soak the cashews in a bowl with 1/2 cup of water for at least 12 hours. After that time, the cashews with their water must be blended together with yeast, oil, salt and poppy seeds. Put the mixture in a small pan and cook it, adding agar-agar until it comes to boil, keeping on mixing with energy. When the mixture will get quite thick, you can put it in a mold, previously lined with oil and poppy seeds. Finally, let it cool down in the fridge for a hour, and your veg-cheese is ready!
It’d easy to make, but, most importantly it’s healthy!
You can have it with a spoon…
but it’s even better spread on a good slice of rye bread!

Jem: Hi there! I think also other nuts can be used, although I think that cashewes have the best flavour and texture to achieve this result. As far as I know, vegan cheeses are also made of sunflower seeds, maybe it’s worth a try.
