Mini Carrot and Yannoh “Cheesecake”


This is a simple, almost banal recipe, I know….. but desserts with only fruit to sweeten are my daily breakfast….. I couldn’t give up cooking and eating them 😀
My meals are ideal for singles….. infact I have noone to share my experiments with so….. I always cook small portions, because I don’t want to wast anything.

(makes 1 portion)
for the biscuit:
2 tablespoons of oat flour
1 soaked dried plum
cinnamon powder
thinly grated lemon peel
1 teaspoon of cocoa beans in pieces
a piece of whole grain bread
for the orange cream:
1 boiled carrot
vanilla powder
4 cashews
1 spoon beans flour
1 soaked dried apricot
1 tablespoon of soy yogurt
agar agar (if you have it, if not add more flour)
for the brown cream:
1 soaked dried plum
1 teaspoon of flour
1 teaspoon yannoh coffee

First of all prepare the “biscuit”: mix and blend all the ingredients, adding some water or soy milk if the final result is too dry. If you don’t have cocoa beans or you don’t like the bitter taste, you can replace them with dark chocolate chips.
Now, cut some baking paper, giving it a rounded  shape. Place it in a small poel, and spread the cream on it (me, instead, I cooked in the microvawe for 3 minutes): cover whe poel and let cook until it isnt crunchy, cooking on the other hand too.
Omce you’ve got the biscuit, you can prepare the orange cream: blend all the ingredients, and heat the cream in a small poel (or in a ceramic glass if in microwave), mixing carefully.
When it reaches a creamy consistency…… you can place it on the biscuit.
Now you only need to blend the plump, add flour and yannoh, and heating them until it’s well cooked and creamy.
Set the mini cake in the fridge….. until it’s’t cold and ready to be eaten.

    However I contacted the restaurant dealers and are waiting for my arrival in March….. I managed to postpone my departure (for the last time I hope)
