Spicy Banana Muffins
This morning I wanted to try my first sweet recipe without eggs, and the idea came from an overripe banana, to ripe to be eaten. I didn’t feel like having it, as I only like unripe and not too sweet bananas.
Ingredients:
(makes about 4 muffins)
1.75 oz (50 gr) of corn starch
3.5 oz (100 gr) of plain cake flour
4 tablespoons of sunflower oil
3/4 cup of rice milk
1 overripe banana
3 tablespoons of sugar
1 oz (30 gr) of almonds
4 dates
a pinch of cinnamon
a pinch of ginger
2 finely chopped cloves
1/2 tablespoon of baking powder
Method:
Blend the banana with rice milk, almonds, dates, sugar, oil, and all the spices, to get a smooth mixture. Add the corn starch and the plain flour, little by little, together with the baking powder. Finally, put the mixture in the muffin moulds and bake them in at 180°C for 25 minutes.

although I do not particularly like bananas in cakes, I’d like to try this one, I think it blends very well with the other ingredients, and all the spices help to dort of “hide” its distinvtice flavour.
