Pear+Ginger Muffins
Lately I’ve got a muffins-mania! These onese, with a sweet but spicy taste, are a real pleasure!
Ingredients:
1 cup of kamut flour
1/2 cup of brown sugar
3/4 cup of Williams pears centrifugate
1/3 of cup of corn oil
3 tablespoons of potato starch
1 teaspoon of ground ginger
2 tablespoons of flaked almonds
1 teaspoon of cream of tartar
nuts and flaked almonds, to decorate
Method:
In a bowl, combine flour, sugar, starch, ginger and almond flakes. Centrifugate the pears to get about 3/4 cup of juice, then add it to dry ingredients, mixing well. Add corn oil and, eventually, the cream of tartar, stirring vigorously dupwards, to incorporate air in the mixture. Pour the mixture in the paper cups, placed inside the muffin molds; or, alternatively, oil and flour well the moulds themselves. Bake at 180°C for 35 minutes. With this quantity I got 12 muffins, disappeared within a few hours 🙂
