Cauliflower and Pumpkin Pâté

Lately, my fridge “cries”, work commitments are literally drowning me :-(. I had to improvise a condiment for the pasta with the few ingredients at hand, which later became a pâté on bread and crackers :-).

(serves 1):
100 gr of cauliflower
approx 70 gr of pumpkin
1/2 clove of garlic
1 handful of shelled walnuts
2 teaspoons of extra virgin olive oil

Preparing this pâté is very quick. After blanching cauliflower and pumpkin  for about 10 minutes, chop and combine them with the other ingredients. Blend everything with a hand blender and it’s ready! If too dense, I suggest you keep a very little cooking water and add it to the pate.
This creamy spread can be used as a “pesto” for pasta or as pate on crackers. The taste is quite distinctive and garlicky, but I loved it.
