Seitan “al civet”

A super recipe I made at Christmas! 😉

Accompanied by a good side dish could be your winning main … who knows? 😉

600 gr of seitan
2 liters of red wine (a good one! Mine was a Dolcetto d’Alba, but also Barbera goes well with this recipe)
1 carrot
1 rib of celery
1 onion
2 or 3 cloves of garlic
spices at your will (literally, a little bit of everything you’ve got in the kitchen!)

Cut the seitan into chunks and plunge it in the wine with carrot, celery and onion, cut into large pieces, plus all the spices and flavours you want. Let it brew at least 36 hours, then pick the seitan up and strain the wine. Place seitan and wine in a saucepan, add the vegetables you have previously puréed. Cook it on a low heat until the liquid has almost completely gone and the seitan is covered by a delicious sauce. Bon appetit!
