Delicious Banana Bread

3 very ripe bananas (almost black)
100 gr of apple puree
60 ml of vegetable oil (any oil except olive oil)
100 gr of sugar
2 tablespoons of barley malt or rice malt
256 gr of cake flour
9 gr of sodium bicarbonate
12 gr of ground cinnamon
3 gr of nutmeg
1 pinch of salt

Turn the oven on to 180°C. In a bowl, put the bananas and mash them with a fork until they get puréed (do not use the electric whisk); add sugar, apple puree (I buy small packs of 100 gr, sugar free, in any supermarket), oil, malt and mix them with a wooden spoon or a whisk (not electric), until the mixture gets homogeneous. In another bowl, combine flour, baking soda, spices and salt. Combine the sifted flour mixture with bananas. If you wish, you can add nuts or chocolate drops, but I prefer it with nothing else. Transfer the mixture into a small bread tin, lined with a bit of baking paper – or you can make muffins. I think the best thing is to prepare it in such a way you can slice it in the morning. Leave it in oven for 45-50 minutes or until golden brown, and a knife inserted in the middle comes out clean (unless we’ve put the chocolate drops 🙂 ). If you make muffins, they take only 20 minutes. Let it cool before eating it, and you’ll see how it’s soft, sweet and delicious!
