Cake in a Jar

I love cakes, but I hate to find myself with a whole cake to finish alone (maybe Mom eats 2-3 slices, but I get bored after just two mornings with the same breakfast!). Then I found the solution: the cake in the jar, in this case made of pumpkin, but you can make it with the fruit you like! There are many ingredients, but it’s really worth it!

(makes 3 jars of 200 ml):
75 gr of wheat flour
45 gr of Panela sugar
1/8 tsp of cinnamon
1/8 tsp of ground ginger
1/8 tsp of nutmeg
1 pinch of cardamom powder (or crushed cardamom seeds)
1/4 tsp of fleur de sel
1 tsp of baking powder (such as cream of tartar)
1/2 tbsp of ground flaxseed
2 tbsp of water
1/4 cup of pumpkin puree
50 ml of soy milk
1/8 of cup of apple purée (apple sauce)
200 gr of pumpkin, diced
1 and 1/2 tbsp of Panela sugar
1 tbsp of flour
1 tbsp of coconut oil
1/4 tsp cinnamon
1 pinch of cardamom powder
2 tbsp of almonds (16 gr)

Cook the diced pumpkin in the microwave for 3-4 minutes. Set aside. In a medium bowl, prepare the “egg” by mixing ground flaxseed with water and leave it aside for at least 10 minutes. Turn the oven on to 175°C. In a largest bowl, mix the dry ingredients (flour, sugar, cinnamon, ginger, nutmeg, cardamom, baking powder and salt). Add the remaining ingredients to the medium bowl (pumpkin puree, soy milk, apple puree) and mix. Add this mixture to the bowl of dry ingredients and mix well. Stir in the pumpkin chopped into cubes. Now, mix with a fork the ingredients for the streusel (sugar, flour, coconut oil in the solid state, cinnamon, cardamom) in a cup of coffee (I have then put it in the fridge for 5 minutes). Pour 2-3 tbsp of this mixture into each jar, sprinkle some chopped almonds, add another layer of mixture and finish with the remaining almonds and the streusel (crumbled with your fingers). Bake for 25 minutes, until the surface of the cakes goes back slowly pressing with a finger. Remove from oven and let them cool. I keep hem in the fridge up to 3-4 days. For breakfast, I get my jar and put it in the microwave for 40 seconds 😉
Nutritional information per serving: 269 calories, 6 gr protein, 41 gr carbohydrates, 8 gr fat.

    Looks very very interesting… a lot of ingredients, I wonder how they blend!
