Fennel Ice Cream

Raw fennel ice cream!

Ingredients:
2 frozen pears, chopped
1 fresh fennel
2 dates, rehydrated
1 tablespoon of water (from the rehydration of dates)
goji berries (to decorate)

Method:
Purée the fennel, along with dates and a tablespoon of water, from their rehydration. Then add, little by little, the puréed frozen pears, until you get a  soft and compact ice cream.
It’s a very light and aromatic ice cream. The flavor of fennel is mild but refreshing, appreciated even by those who do not particularly like it (my boy had it spoonful after spoonful). I love fennel! 🙂
