Vegbab
I have never tasted the kebab, but M. was missing it, as it was one of those dishes he loved when he still ate meat. I made a bit of searching, and about two years ago I found this recipe for vegan kebabs on the internet. I made some changes to the doses of the spices, and has become a workhorse of our kitchen. Guys, I don’t know if I’l be able to post more recipes, as now we’re at – 3 from the “big day” and I have 1000 things to do. If I can, I promise to show you some pictures of the wedding on Saturday, as we leave for the Maldives Sunday afternoon ๐ What else can I say? That I love you a lot, because you’re wonderful – and even if I don’t know personally, I often feel closer to you than to so many “aliens” around me …
Ingredients:
500 gr of plain seitan
2 shallots, sliced
1 clove of minced garlic
1 teaspoon of cumin
1 teaspoon of coriander
1 teaspoon of sumac
1 teaspoon of paprika
1/2 teaspoon of cinnamon
a pinch of grated nutmeg
red pepper, to taste
1/2 teaspoon of salt
1/2 teaspoon of pepper
4 tablespoons of extra virgin olive oil
Method:
I cut the seitan into slices, half a centimeter thick. I mixed all the spices in a bowl. In a large glass container, I made some layers with seitan, shallots, garlic, spices and oil. I closed with a lid and let it marinate in the fridge for 24 hours. I heated the oven to 250ยฐC, with the grill function. I laid the seitan, with all its marinade, in a baking dish and baked for 10/15 minutes, turning the slices at least a couple of times, so that they don’t get burnt. I served it on a leaf of lettuce, accompanied by steamed broccoli and mixed salad. If you wish, you can also heat it in the pan. It’s quicker, but doesn’t get the “crust”. Exquisite ๐
