Spelt Biscuits
Very easy recipe for tasty cookies!
Ingredients:
250 gr of white flour
125 gr of organic spelt flour
150 gr of sugar cane
150 ml of peanut oil
150 ml of white wine (or beer)
1/2 tablespoon of baking powder
Method:
Combine the dry ingredients and mix well; then incorporate the oil. Add the white wine last (or beer … at your discretion!) and mix it all. It will come out a nice ball of dough, soft and sticky, but elastic and firm. On a floured surface, roll the dough out thinly, cut the cookies in the shape you like best: I made rectangular biscuits and other half-moon shaped. Roll the cookies in a little brown sugar and bake at 180°C for about 20 minutes. My oven got crazy and took 30 minutes, but I think that with a regular oven 15-20 minutes will suffice 😉

This recipe came from a recipe that a friend of my Mom’s suggested me – she didn’t know it, but had a great vegan recipe in her hands 😀 and I took the opportunity to come back from my long silence! Anyway, these cookies are perfect for breakfast, and to be crunched during the day, they have a rustic flavor that really makes me mad.
