Creamy Tart

A very simple and easy cake, but most of all, delicious to taste!

I have been given this recipe by Emanuele, a master of vegan bakery, and was very much appreciated by my colleagues of the massage course who tasted it! I propose you the “basic” recipe, which you can “play” with, creating so many alternatives, depending on your tastes (chocolate, flavoured with any fruit or flavor, etc..)

Ingredients:
250 gr approx. of vegan cookies (I used the “Digestive McVities”)
1 liter + 1 plus 280 gr + a bit more (to moisten the biscuits) of vegan milk (I used soy)
1 lemon (zest)
70 gr of flour
60 gr of corn starch
10 gr of agar agar
250 gr of sugar
Ingredients for the decoration:
jam to taste (I used strawberry)
flowers to taste (I used borage, orago officinalis, and petals of calendula arvensis)
fruit to taste (I used strawberries, kiwi, plums and lemon peel)

Method:
Crumble the biscuits and moisten them with a little milk; lay the mixture so obtained at the bottom of a spring cake tin. Boil the milk with the lemon zest. Meanwhile, prepare a batter by mixing all the other ingredients. Once the milk is heated, pour in the batter just prepared, and keep stirring until it’ll be well thickened. Remove the lemon zest and pour the mixture into the tin, over the layer of biscuits. Let it rest in the fridge overnight. When the cake is very cold you can remove and decorate it as you like best. I laid strawberry jam on the surface, sliced ​​2 plums and with these I created the rose in the center, by placing slices / petals as a spiral. Then I cut the strawberries along the circumference with an inclined staggered pattern, so as to get some sorts of flowers; then I used some parts of the lemon zest as the center of the flower; then , to finish with the fruit, I sliced the ​​kiwi with a knife and I got some sort of leaves. I arranged the borage flowers along the contour of the cake and I finally put marigold petals in the empty spaces. And our cake is done!
