Dates Muffins
Combine dates, raisins, cranberries and a little else … The result? These fragrant and spongy muffins …
Ingredients:
14 dates
2 handfuls of raisins
1 tablespoon of cranberries
1 pinch of vanilla
1 pinch of turmeric
4 tbsp of sunflower oil
1 cup + 1/2 of water
1 cup + 1/2 of wholewheat flour
1/2 cup of chestnut flour
1 tablespoon of rice malt
1 tablespoon of cornstarch
1 teaspoon of baking powder
1/2 teaspoon of baking soda
Procedure:
In a food processor put dates, cranberries, raisins, malt, water and oil; finely chop until the mixture is smooth. In a bowl, mix flour, vanilla, turmeric, starch, baking powder, baking soda and mix with a whisk. Add the pureed mixture of dried fruit and stir to create a batter, quite thick and without lumps. Transfer into muffin molds and bake in preheated oven at 180°C for 25 minutes. These muffins are delicious and are naturally sweet 🙂
