Raw Cake
Since I have been given too many vacuum dried figs, I decided to make a raw cake, both because I want detox from all those starchy food I swallowed recently and because I still feel like having something sweet, and so …
Ingredients:
150 gr of dried figs
10-15 tablespoons of almond flour
3 strawberries
1 teaspoon of ginger
100 gr of cashew nuts
Indian vanilla
1 teaspoon of carob powder
1 orange juice
orange peel
Method:
Soak the figs a few hours (mine were very hard) and in another container, soak the cashews as well. Take the figs and blend them with the juice of 1 orange and 2 small strawberries, add the ginger (if desired), the grated orange zest and almond flour. Knead the dough with a fork, put it in a mold and let it rest in the fridge. Meanwhile, take the cashews and blend them with the pulp of vanilla bean, until gets soft and creamy. Divide the cream into 2 and add the carob powder, so as to obtain one white and one black cream. If you want it sweeter, add agave syrup, but I’ve left it plain. Take the base, remove from the mold and decorate it with cream, strawberries and orange zest.
