Veg Raw-Cheese

Ingredients:
1/2 cup of almonds
fresh mint, to taste
thyme
other flavors atyour will
1 teaspoon of water
Method:
Easy peasy! 😀 Put the almonds in the freezer in advance for at least 4 hours, so they will get cool just enough not to affect the grinding phase. Then, grind them along with the herbs, and – once you’ve got a very fine flour – add a teaspoon of water. It will form a quite soft mixture, malleable. Personally, I suggest to prepare it in the evening for the next day, so that the aromas can give all their delicious flavuor! Obviously, you can enjoy it with a salad or as a delicious pâté for your sandwiches. Can be spread quite easily! 😉

sounds excellent, I’m not particularly fond of vegan cheeses, but this one is worth trying 🙂
