Millet + Vegetables Flan
I started the week spoiling myself with some good food. Before the apple cake, I suddled myself with a millet flan, with some the vegetalbles I had leftover in the fridge over the weekend.
Ingredients:
70 gr of millet
100 gr of white onion
120 gr of mixed vegetables (carrots, artichokes, and 3 Brussels sprouts)
150 gr of steamed cabbage
2 artichokes
breadcrumbs
soy milk, as needed
1 pinch of salt
1 pinch of turmeric
2 tablespoons of extra virgin olive oil
Method:
I made this pie it last night, knowing that, alas, today it would have been a busy working day, with a super fast lunch break. Therefore, I opened the fridge, which besides being sad because of its emptiness, contained some leftovers, including stewed cabbage from last Friday and two boiled artichokes.
Soak millet for a half hour, and then cook it in a pot. Meanwhile, finely cut all the vegetables and stew them in a pot with a little water, salt and turmeric, which will give the dish a lovely ochre colour. When the vegetables are nice and soft and the millet is done, mix breadcrumbs and milk in a bowl, to get a soft mixture. Pour the millet, previously mixed with vegetables, into a bowl and add two tablespoons of oil. Mix everything with a spoon and transfer it in a pyrex pan, pouring a little oil over the pie before baking it. Bake all at 200°C. It ‘ll be ready when it forms nice golden crust on its surface.
