Purple Soup
The happiness diet ๐
Ingredients:
1 purple cabbage
2 red onions
3 tablespoons of soy sauce
fresh chives
90 gr of wholewheat pasta
1/2 teaspoon of curry powder
1/2 boiled beetroot
extra virgin olive oil
pepper
Method:
Wash and cut onion and cabbage, and put them in a pressure cooker, along with soy sauce and cold water, as needed. Cook it 12 minutes from the whistle. Once done, add the beetroot and blend it all. Separately, cook the pasta”al dente” (underdone) and drain it. Pour the soup the plate and add a bit of pasta; add the chives, chopped, 1 pinch of curry powder, 1 pinch of pepper and 1 drop of olive oil. An idea to colour your day ๐ ๐ See you soon! Federica ๐
