Spicy Pea Creamy Soup
Hi there! It’s always a pleasure to read you! Today I propose a simple and delicious recipe. You don’t need many ingredients, just fresh peas and some spices… to turn a simple creamy soup into a special one 🙂 It’s so nice to publish, I always feel at home here on Veganblog; and this thank to you, I love you! 🙂 🙂
Ingredients:
200 gr of shelled peas
1 white onion
6 sprigs fresh thyme
1/2 teaspoon of vegetarian curry
2 tablespoons of soy cream
1 pinch black pepper
salt
extra virgin olive oil
toasted bread cubes
Method:
Finely chop the white onion, place it in a pan with high sides and sauté it with a drop of extra virgin olive oil and a little water. When it gets creamy, add the peas and let them cook a few minutes. Now, add enough water so as to cover them of about 2 fingers. Boil them – mine were very young and pretty fresh, and 15 minutes were enough. Towards the end of cooking, add the salt. Check the amount of water, as the soup must be very creamy. If it’s too much, remove it with a spoon and set it aside for other preparations. Once done, blend it all and add the vegetarian curry: it’s very aromatic and less aggressive than the usual curry, but if you cannot find it, the usual curry is fine, perhaps reducing the dose. Or add the spices you like best. Add black pepper and 1 tablespoon of soy cream per serving: with these doses I prepared 2 bowls. Finish it with sprigs of fresh thyme and a few cubes of toasted bread. Good, fresh, melting and slightly spicy, a pleasure for our accomplished palates! 🙂 🙂
