Paradise Cake
I am pleased to inform you that heaven exists! 😉
Ingredients for the pastry:
1/2 cup of almonds
2 tablespoons of sesame seeds
3 tablespoons of brown sugar
1 cup and 1/2 of whole wheat flour
3 tablespoons of corn oil
rice milk, to taste (1/2 cup approx)
1 dash of vanilla
1 pinch of salt
1 pinch of baking powder
Ingredients for the filling:
1 cup of rice milk
1 tablespoon + 1/2 of corn starch
2 cm of kanten or 1 teaspoon of agar agar
1 teaspoon of almond butter
1/2 teaspoon of vanilla
1/2 teaspoon of turmeric
2 tablespoons of malt
zest of 1/2 organic lemon (whole)
Method:
In a food processor, finely chop almonds and sesame oil to get almost a meal. Transfer it into a bowl along with sugar, flour, vanilla, salt, baking powder and stir with a whisk. Add oil and milk, and mix to get a smooth and firm ball. Cover with a plastic wrap and let it rest for 30 minutes in the fridge. Take the pastry and roll it between two sheets of baking paper, transfer in a baking tin and bake at 180°C for 15-20 minutes. Meanwhile, prepare the custard by putting all the ingredients in a saucepan. Stir with a whisk and bring it to a boil, keep cooking until you get a smooth and velvety texture. Turn the heat off and remove the lemon zest. Once the pastry has cooled add the custard and decorate with a basket of strawberries, or as your imagination suggests you:-D Toooooo good!!
