Quinoa Croquettes
For every occasion! 😉
Ingredients for the croquettes:
300 gr of quinoa
100 gr of hulled lentils
1 carrot
1 fresh onion
5 zucchini flowers
1/2 cup of bread crumbs
1 tablespoon of sesame seeds
1 teaspoon of curry powder
fresh ginger
parsley
fresh garlic
soy sauce
salt and pepper
sunflower oil
Ingredients for the sauce:
30 gr of tofu
fresh garlic
fresh chives
1 tablespoon of lemon juice
1 tablespoon of organic sunflower oil
water, as needed
salt and pepper
Method:
In a pressure cooker, cook quinoa and lentils with cold water twice their weight and 1 pinch of sea salt. Let them cook 25 minutes from the whistle. Meanwhile, in a food processor, chop together carrot, onion, zucchini flowers, 2 cm of ginger, parsley, garlic, sesame, curry powder and add this mixture to the quinoa, along with bread crumbs, 1 drop of sunflower oil, soy sauce, salt and pepper. Mix everything and let it cool; then with the help of two spoons, form the croquettes and put them on a baking sheet, lined with baking paper. Add 1 drop of oil and bake at 200°C for 25-30 minutes. Meanwhile prepare the sauce by combining all the ingredients and blending them all with a hand blender. Transfer to a bowl. Serve the croquettes accompanied by the sauce! 🙂 They’re suitable as a main dish or to be served as a delicious appetizer … the’yre healthy, tasty and good!
