A mouth-watering recipe! Even for those who do not like tofu, I assure you that the result has exceeded my expectations!

Ingredients:
125 gr of plain tofu
1 medium aubergine
capers, to taste
4 sun-dried tomatoes
parsley
dried spices, to taste

Method:
After cutting out the 2 ends of the aubergine, I sliced it ​​lengthwise and grilled. I crumbled the tofu on a plate, smashing it with a fork (I did not want to use the mixer!), added the tomatoes, cut into small pieces and previously soaked in water and vinegar, chopped capers, parsley, salt and a mixture of dry spices that I love, called “pizza mix” (bought at the usual supermarket); it’s made of chili, oregano, chives and basil, this is the secret of the dish!

Now, who is not freak as I am, can add a little oil to the mixture before placing it in the middle of the aubergine slices, that then you’ll close with one or more toothpick. I laid the rolls on a silicone baking pan (so you do not need the baking paper) and baked for 15-20 minutes at 180°C (hot they taste better!). A dash of olive oil and enjoy!
