Seitan with Wild Strawberries
This dish was born almost by accident, I had some wild strawberries leftover, Edu gave me an idea and I applied it. The result was just great for the palate! Thanks Edu, I’m so sorry you and Libera could not to share with me and Iaia this fantastic idea. Thank you again.
Ingredients for the seitan:
(serves 2)
4 slices of homemade seitan
1 shallot
1 handful of pine nuts
extra virgin olive oil
Ingredients for the sauce:
300 gr of wild strawberries
1/2 tablespoon of balsamic vinegar
1/2 tablespoon of balsamic vinegar glaze
1 pinch of salt
1 tablespoon of mascobado sugar
1 dash of pepper
1 level tablespoon of mustard concentrated
2 basil leaves
Method:
Brown the shallots and the pine nuts with a drop of extra virgin olive oil; once done, add the seitan slices (mine was homemade, then I’ll post my recipe, if you like) and cook about 4 minutes each side. Meanwhile, put all the ingredients for the sauce in a blender and blend until gets creamy. Taste if the result is right for your palate. When the sauce is perfect, add about 3/4 of in the pot where the sitan is, and let it thicken a little, for about 5 minutes, turning the seitan. It’s ready, put it in the plates and pour over the remaining strawberries cream. Enjoy your meal! Live well and let live better.
