Drunk seitan
Ingredients:
10 slices of plain seitan (thickness: ~ 1 cm, diameter: ~ 8 cm)
1 liter of red wine
5 tbsp of rice flour
1 large white onion
seasoning, to taste
juniper berries
extra virgin olive oil, to taste
salt and pepper, to taste
Method:
Plunge the seitan in the red wine and add herbs, juniper berries, salt and pepper. Do not disturb it for at least 24 hours. After at least 1 day, drain the seitan and filter the wine (keep it!). In a large frying pan, fry the onion in a bit of extra virgin olive oil, then add the seitan, raise the heat and wait for it to form a light crust (turning the slices a few times). Add the wine and more juniper berries; cook for about 1 hour and 1/2, then add the rice flour and cook 1/2 hour more. If necessary, add more rice flour during the last 15 min of cooking to adjust the consistency of the aromatic-alcoholic sauce 😀
