Creamy mushroom pasta

Blended cashews work well as a substitute for a creamy sauce. This is a very simple sauce that you can have on its own or with mushrooms.
50 g cashews, soaked over night
1/2 tbsp lemon juice
1 clove of garlic
140 g mushrooms
handful of parsley
1 tbsp olive oil
200 g pasta

Simmer the cashews for 10 mintues and drain well. Boil the pasta in 2 litres of water with 20 g of salt. Blend the cashews, lemon juice and salt and pepper for at least 4-5 minutes. In the meantime, fry the garlic in the oil and add to the blended cashews. After the pasta has finished cooking, reserve 250 ml of the water and add to the blender. Blend until the sauce is completely smooth. Fry the mushrooms, then add the pasta and sauce and mix well. Serve with the chopped parsley. Add more seasoning if you wish.
