Cottage pie
This is an all in one dish meal that you can put together in advance and then pop in the oven in time for dinner. Mince and vegetables with a roast onion gravy, topped with fluffy mashed potatoes and a golden crispy topping. This is great for a friends and family dinner. This makes enough for 3 servings, but you can multiply quantities if you need to.
Gravy ingredients:
225 g onions
1 tsp brown sugar
1 tbsp dark soy sauce
1 tsp mustard
425 ml veg stock
1 tbsp plain flour
Filling ingredients:
200 g vegan mince or ground seitan
100 g sweetcorn
70 g carrots
55 g frozen peas
Mashed potato ingredients:
480 g potatoes, peeled and chopped
75 ml soy milk
3 tbsp margarine
1/4 tsp salt
Method for the base:
Preheat the oven to 240 or 220 fan assisted. Coat the chopped onions with the sugar and 2 tsp of oil and roast in the oven until the edges start to brown. Meanwhile, boil the potatoes until cooked. Start making the gravy by bringing the stock to the boil and adding the soy sauce, mustard and flour. When the onions have finished roasting add to the stock mix, with the mince and vegetables. Simmer for around 5 minutes. Reduce the oven temperature to 190 or 170 fan assisted. Add the base ingredients to the pie dish.
Method for topping:
Mash the potatoes with the 2 tbsp of margarine, milk and salt. Melt 1 tbsp of margarine. Spread the mashed potatoes on top of the mince base, and brush with the melted margarine. Score with a fork, if you like. Bake for 30-35 minutes.
